The Maillard Reaction

Our roasting process transforms green coffee seeds through the Maillard Reaction, where heat converts natural compounds—linoleic acids, sugars, proteins, caffeine, and amino acids—into volatile aromatic compounds like methylpyridine, pyrazines, furans, and ketones that define coffee's characteristic flavors.
